At the same time supple, powerful and very delicate, this wine shows aromas of fruit and a great minerality on finish in the mouth. A fantastic old school style of Chablis that also offers fantastic value for money for a wine at this quality level.

The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. On the finish, a salinity very characteristic of this cru. The Côte de Lechet has a great potential for ageing so you can keep it five to ten years according to the vintage.

The Defaix winery owns 3 ha of this Premier Cru vineyard that is southeast facing and situated within the Clos des Moines parcel. The vines are nearing 50 years in age and low yields contribute to the greater concentration that has had a chance to settle in bottle. Slow and old school is the name of the game at the estate. After a strict triage, only the finest fruit is pressed, parcel by parcel and fermented with ambient yeasts. At times, fermentation lasts weeks.
